  • 1/2 cup ricotta cheese Whole milk ricotta is preferred for richness.
  • 1 large egg Use room temperature for better mixing.
  • 2 tablespoons wholemeal self-raising flour Gluten-free flour can be used as a substitute.
  • 1/4 teaspoon garlic powder Fresh garlic can be used for a stronger flavor.
  • 1 teaspoon dried thyme This herb complements the carrots beautifully.

Preparation
  1. Grate the fresh carrots and place them in a large mixing bowl.
  2. Add the ricotta cheese, egg, flour, garlic powder, and thyme to the bowl. Stir everything until well combined, making sure there are no lumps.
  3. Heat a non-stick skillet over medium heat. Once warm, lightly spray the surface with oil.
Cooking
  1. Scoop tablespoon-sized portions of the mixture into the hot skillet, flattening them slightly.
  2. Cook for 1 to 2 minutes per side until golden brown, flipping when a crisp edge is visible.
Serving
  1. Serve warm with your favorite dip or plain. Store in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. To reheat, use a skillet, oven, or air fryer.

Notes

For the best results, avoid overcrowding the pan. Cook in batches if necessary. You can prepare the batter and refrigerate for up to 2 hours before cooking. Avoid overmixing to prevent dense fritters.
