Ingredients
  

For the Birria
  • 3 lbs beef chuck roast or short rib Opt for well-marbled cuts for added richness.
  • 1 large onion, chopped
  • 5 cloves garlic, minced
  • 2 dried guajillo peppers, stemmed and seeded
  • 2 dried pasilla peppers, stemmed and seeded
  • 8 oz Oaxaca cheese, shredded Choose fresh Oaxaca cheese for the best melting quality.
  • 1 tbsp ground coriander
  • ½ tsp ground cinnamon
  • 12 corn tortillas Can substitute with whole grain for added fiber.
  • to taste salt and pepper Use low-sodium options if desired.

Method
 

Preparation
  1. In a large bowl, season the beef with chopped onion, minced garlic, ground coriander, and cinnamon.
  2. Place the beef in a slow cooker with guajillo and pasilla peppers, adding enough hot water to cover. Cook on low for 4 hours.
  3. Once cooked, remove the beef and sauté any remaining onion and garlic in a skillet until golden.
  4. Blend the sautéed aromatics with the broth until smooth and strain it back into the pot.
  5. Shred the cooled beef into bite-sized pieces.
Assembly and Cooking
  1. Dip each tortilla in the warm broth, fill with shredded beef and Oaxaca cheese, fold, and fry until crispy.
  2. Serve with a side of rich consomé for dipping.

Notes

To reheat, use an oven or air fryer. Avoid microwaving. Tacos can be modified for various diets.
