- In a large bowl, season the beef with chopped onion, minced garlic, ground coriander, and cinnamon.
- Place the beef in a slow cooker with guajillo and pasilla peppers, adding enough hot water to cover. Cook on low for 4 hours.
- Once cooked, remove the beef and sauté any remaining onion and garlic in a skillet until golden.
- Blend the sautéed aromatics with the broth until smooth and strain it back into the pot.
- Shred the cooled beef into bite-sized pieces.
Assembly and Cooking
- Dip each tortilla in the warm broth, fill with shredded beef and Oaxaca cheese, fold, and fry until crispy.
- Serve with a side of rich consomé for dipping.
Notes
To reheat, use an oven or air fryer. Avoid microwaving. Tacos can be modified for various diets.
