  • 4 cups mixed greens (lettuce, spinach, arugula) A mix of greens adds better flavor and nutrition.
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
Cheese & Olives
  • 1/2 cup feta cheese, crumbled Opt for imported feta from Greece for the best flavor.
  • 1/4 cup olives, sliced
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice Freshly squeezed for best flavor.
  • to taste salt and pepper Season to enhance flavors.

Method
 

Preparation
  1. In a large bowl, combine the mixed greens, chopped chicken, halved cherry tomatoes, diced cucumber, diced bell pepper, finely chopped red onion, crumbled feta cheese, and sliced olives.
  2. Drizzle olive oil and freshly squeezed lemon juice over the salad.
  3. Season generously with salt and pepper to taste.
  4. Toss gently to combine all the ingredients and serve immediately for the freshest experience.

Notes

To boost nutrition, consider adding sunflower or pumpkin seeds. For a vegan option, replace chicken with chickpeas or grilled tofu and omit feta.
