Preparation
- In a large bowl, whisk together olive oil, lime juice, and Chicken Taco Seasoning until well combined.
- Add chicken thighs to the bowl and toss to coat evenly in the marinade. Cover and let marinate for 30 minutes at room temperature or up to 24 hours in the fridge.
Cooking
- Preheat your grill to medium-high heat (around 400°F).
- Remove the chicken from the marinade, allowing excess to drip off—discard the marinade.
- Grill the chicken for 4-6 minutes per side, or until cooked through (internal temperature should reach 165°F).
- Let the chicken rest for 5 minutes before slicing into thin strips.
- Warm tortillas on the grill for 20-30 seconds per side or in the microwave for about 15 seconds.
Assembly
- To assemble, start with a tortilla, add chicken strips, and top with chopped romaine, sliced red onion, jalapeño, and cilantro. Drizzle with Cilantro Lime Crema and squeeze lime juice before serving.
- Serve with lime wedges on the side.
