Ingredients

For the Chicken Marinade
  • 1.5 lbs boneless, skinless chicken thighs Preferably use thighs for juiciness.
  • 2 tbsp olive oil Extra virgin for robust flavor.
  • 2 tbsp lime juice Freshly squeezed for brightness.
  • 3 tbsp Chicken Taco Seasoning Use pre-made or homemade.
For the Tacos
  • 1 cup chopped romaine lettuce For a crunchy texture.
  • 1/2 unit red onion, sliced Adds sweetness and color.
  • 1 unit jalapeño, sliced Adjust based on spice preference.
  • 1/4 cup chopped fresh cilantro Essential for authentic flavor.
  • 8 small corn or flour tortillas Use your preferred type.
  • lime wedges for serving Squeeze over tacos for brightness.
  • Cilantro Lime Crema for topping Game changer for flavor.

Method

Preparation
  1. In a large bowl, whisk together olive oil, lime juice, and Chicken Taco Seasoning until well combined.
  2. Add chicken thighs to the bowl and toss to coat evenly in the marinade. Cover and let marinate for 30 minutes at room temperature or up to 24 hours in the fridge.
Cooking
  1. Preheat your grill to medium-high heat (around 400°F).
  2. Remove the chicken from the marinade, allowing excess to drip off—discard the marinade.
  3. Grill the chicken for 4-6 minutes per side, or until cooked through (internal temperature should reach 165°F).
  4. Let the chicken rest for 5 minutes before slicing into thin strips.
  5. Warm tortillas on the grill for 20-30 seconds per side or in the microwave for about 15 seconds.
Assembly
  1. To assemble, start with a tortilla, add chicken strips, and top with chopped romaine, sliced red onion, jalapeño, and cilantro. Drizzle with Cilantro Lime Crema and squeeze lime juice before serving.
  2. Serve with lime wedges on the side.

Notes

Use fresh ingredients for the best flavor. You can prepare the chicken ahead of time by marinating overnight. Store leftovers properly in an airtight container.
