  • 2 cups shredded cheddar cheese Sharp cheddar for intense flavor is recommended.
  • 10-12 small flour or corn tortillas Corn gives a traditional flavor, flour for a softer bite.
  • cooking spray Essential for a golden-brown finish.
  • Cilantro Lime Crema (for serving—optional) Mix sour cream, lime juice, and fresh cilantro.
  • Minced cilantro and sliced jalapeño (to serve—optional) For garnish and flavor enhancement.

Preparation
  1. Preheat your oven to 425°F and line a large baking sheet with parchment paper.
Cooking
  1. Arrange tortillas in a single layer on the sheet and lightly spray both sides with cooking spray.
  2. In a large skillet, add olive oil and ground chicken over medium heat. Sprinkle in the taco seasoning, breaking up the chicken as it cooks until no longer pink, about 5-7 minutes.
  3. Spray both sides of tortillas again and lay them on a separate baking sheet. Spoon cooked chicken onto each tortilla, then top with cheese.
  4. Fold the tacos over and place a second baking sheet on top if needed.
  5. Bake for about 10 minutes. If using a top sheet, remove it, flip tacos gently, and bake for an additional 5 minutes until crispy.
Serving
  1. Serve immediately with desired toppings such as lime crema, cilantro, and jalapeños.

Notes

Ensure ground chicken is at room temperature for easier cooking. Store leftovers in an airtight container for up to three days.
