  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon paprika
  • to taste Salt and pepper
  • 1/4 cup celery, chopped
  • 1/4 cup red onion, chopped

Method
 

Preparation
  1. Begin by cooking the pasta according to package instructions. Drain and allow it to cool completely.
  2. In a large bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, and paprika. Stir gently until they form a creamy blend.
  3. Add the cooled pasta, celery, red onion, and chopped parsley. Mix everything until well combined.
  4. Cover the bowl and chill the salad in the refrigerator for at least 30 minutes.
  5. Once chilled, serve in a beautiful bowl.

Notes

For a healthier option, add chopped bell peppers or spinach, or replace half of the mayonnaise with Greek yogurt for extra protein. Avoid overcooking the pasta and using low-fat mayonnaise.
