Ingredients
  

Tortillas
  • 4 large Large flour tortillas Opt for fresh, high-quality tortillas.
Cheese
  • 2 cups Shredded cheddar cheese (or any cheese of your choice) Cheddar melts beautifully; consider mixing in other cheeses.
Proteins
  • 2 cups Protein options (chicken, fish, beef, pork, tofu, or beans) Leftover cooked proteins work well.
Vegetables
  • 1 cup Finely chopped red onion Can substitute with green onion or jalapeño.
  • 1 cup A handful of finely chopped cooked veggies (like zucchini, bell peppers, corn, etc.) Use whatever is on hand.
  • 1 cup A handful of chopped raw vegetables (tomatoes, radishes, lettuce, or cilantro) Freshness elevates the dish.
Dips
  • 1 cup Dips of choice (avocado, salsa, sour cream or Greek yogurt) For serving with quesadillas.

Method
 

Preparation
  1. Gather all fillings and toppings before you start.
Cooking
  1. Heat a large griddle or pan over medium heat until hot, about 5 minutes.
  2. Add as many tortillas to the pan as there are mouths to feed. Divide your toppings among them but only cover one half.
  3. Fold each tortilla over itself to close. Cook until the bottom is browned and the cheese is melted, about 3-5 minutes.
  4. Slide them onto a plate and cut into triangles. Serve with your desired raw toppings and dips.

Notes

Ensure the butter is at room temperature for easy spreading on the tortillas. If cooking in batches, keep finished quesadillas in a warm oven (around 200°F) until ready to serve.
