Preparation
  1. Boil the diced potatoes in salted water until tender, about 15 minutes.
  2. Drain the potatoes and let them cool completely.
  3. In a large bowl, mix the Greek yogurt, lemon juice, dill, salt, and pepper until well-combined.
  4. Once the potatoes have cooled, add them to the dressing along with the chopped eggs, celery, and red onion.
  5. Gently stir until everything is combined, avoiding breaking the potatoes.
  6. Chill for at least 30 minutes before serving to enhance the flavors.

Notes

For a creamy variant, substitute half of the Greek yogurt with mashed avocado. Can add nuts for crunch and extra omega-3s. This salad is naturally gluten-free.
