  • 2 teaspoons Cumin A spice that uplifts the overall flavor.
  • 1 teaspoon Salt Basic seasoning that enhances all ingredients.
  • 1 teaspoon Black Pepper Basic seasoning that enhances all ingredients.
  • 2 tablespoons Aji Panca Unique Peruvian pepper providing color and heat.
  • 2 tablespoons Aji Mirasol Unique Peruvian pepper providing color and heat.
For the Skewers
  • 2 pounds Beef Heart Tender, nutrient-dense meat.
  • 4 pieces Boiled Potatoes Traditional accompaniment.
  • 2 ears Corn Traditional accompaniment.
  • 1 cup Aji Amarillo Sauce A zesty dipping sauce.
  • to taste Fresh Cilantro For garnish.
  • 1 pieces Lime Wedges For a citrusy finish.

Method
 

Preparation
  1. Trim the Beef Heart: Remove membranes and excessive fat, then cut it into evenly-sized cubes to ensure even cooking.
  2. Prepare the Marinade: In a bowl, whisk together vegetable oil, red wine vinegar, minced garlic, oregano, cumin, salt, aji panca, aji mirasol, and black pepper until well combined.
  3. Marinate the Meat: Add the beef heart cubes to the marinade, ensuring they are well-coated. Refrigerate for at least 4 hours or overnight to maximize flavor.
  4. Skewer the Meat: Thread the marinated beef heart onto skewers, leaving some space between pieces to allow for even cooking.
Cooking
  1. Grill: Preheat the grill to high heat and grill the skewers for 8-10 minutes, turning frequently and basting with leftover marinade for a flavorful finish.
  2. Rest and Serve: Let the skewers rest for a few minutes before serving with boiled potatoes, corn, and aji amarillo sauce, garnished with fresh cilantro and lime wedges.

Notes

Serve with quinoa or whole grain rice for added fiber and additional vegetables for extra nutrients. Basting skewers during grilling prevents them from drying out.
