Main Ingredients
  • 14 oz pasta (Barilla rotini or penne recommended) Use high-quality pasta for better sauce adherence.
  • 1 large cucumber (peeled, sliced into 1/2-inch half-moons) Adds crunch and freshness.
  • 18 oz cherry tomatoes (halved) Provides juiciness and color.
  • 3/4 cup olives (preferably Mezzetta sliced kalamata) For a briny depth of flavor.
  • 5 oz feta (crumbled) Use block feta for a creamier texture.
  • 1/2 unit red onion (thinly sliced) Adds sweetness and crunch.
  • 1/4 cup fresh parsley (chopped) For a pop of freshness.
Dressing Ingredients
  • 1/3 cup olive oil (extra-virgin for richer flavor)
  • 4 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 2 tsp oregano (dried)
  • 1 tsp honey Can substitute with maple syrup for a vegan version.
  • 3 cloves garlic (freshly pressed)
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes Adjust for spiciness.

Method
 

Preparation
  1. Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente as per package instructions. Drain and rinse under cold water to stop cooking.
  2. While the pasta cooks, wash and slice the cucumber into half-moons, halve the cherry tomatoes, and thinly slice the red onion.
  3. In a separate bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, honey, pressed garlic, pepper, salt, and red pepper flakes until well combined and emulsified.
  4. In a large mixing bowl, combine the drained pasta, cucumbers, cherry tomatoes, red onion, Kalamata olives, feta, and parsley.
  5. Pour the dressing over the salad mixture. Gently toss until everything is well coated, allowing the flavors to meld together for at least half an hour.
  6. Before serving, taste and adjust seasoning if necessary.

Notes

This salad can be made in advance and tastes even better after sitting in the fridge for a few hours. Store it in an airtight container for up to three days.
