Preparation
- In a large bowl, combine masa harina, warm water, salt, and 2 tablespoons of vegetable oil. Knead until a soft, pliable dough forms, about 4-5 minutes.
- Divide the dough into 12 equal pieces, rolling each into a round disc about 1/4 inch thick.
Cooking
- In a large cast iron skillet, heat 1/2 inch of vegetable oil over medium-high heat.
- Fry the discs until golden brown and crispy, about 2-3 minutes per side.
- Transfer the fried gorditas to a plate lined with paper towels to drain excess oil.
Assembly
- Cut each gordita in half and fill with shredded chicken or beef, diced onions, and fresh cilantro.
- Squeeze lime juice over the top before serving.
Notes
Serve gorditas on a colorful platter with lime wedges. For a vegan version, substitute meat with sautéed mushrooms. To reheat, place in an oven preheated to 375°F for 8-10 minutes.
