Ingredients
  

Dough Ingredients
  • 2 cups Masa Harina Look for nixtamalizado for authenticity.
  • 1.5 cups Warm Water
  • 1 teaspoon Salt
  • 2 tablespoons Vegetable Oil Plus more for frying.
Filling Ingredients
  • 2 cups Shredded Chicken or Beef
  • 1 Onion, diced
  • 1 cup Fresh Cilantro, chopped Use fresh, organic for better taste.
  • Lime Wedges, for serving

Method
 

Preparation
  1. In a large bowl, combine masa harina, warm water, salt, and 2 tablespoons of vegetable oil. Knead until a soft, pliable dough forms, about 4-5 minutes.
  2. Divide the dough into 12 equal pieces, rolling each into a round disc about 1/4 inch thick.
Cooking
  1. In a large cast iron skillet, heat 1/2 inch of vegetable oil over medium-high heat.
  2. Fry the discs until golden brown and crispy, about 2-3 minutes per side.
  3. Transfer the fried gorditas to a plate lined with paper towels to drain excess oil.
Assembly
  1. Cut each gordita in half and fill with shredded chicken or beef, diced onions, and fresh cilantro.
  2. Squeeze lime juice over the top before serving.

Notes

Serve gorditas on a colorful platter with lime wedges. For a vegan version, substitute meat with sautéed mushrooms. To reheat, place in an oven preheated to 375°F for 8-10 minutes.
