  • 2 pieces ripe plums (chopped, about 1 cup) Choose plums that are slightly soft to the touch; they should yield gently when pressed. If unavailable, substitute with ripe peaches or nectarines.
  • 1 small cucumber (chopped, about 1 cup) Feel free to use English cucumber for a sweeter bite.
  • 2 pieces jalapeño peppers (seeded and diced) Adjust the amount based on your heat preference.
  • 1/4 cup red onion (diced) Soak the diced onion in cold water beforehand to mellow its flavor.
  • 1 piece lime (juice of) Freshly squeezed lime juice enhances the flavor.
  • 2 tbsp cilantro or parsley (chopped) Use fresh herbs for best flavor.
  • 1/2 tsp coarse salt (Kosher or Sea Salt) Enhances all the flavors; adjust based on taste.

Preparation
  1. Start by washing all your produce thoroughly. For the plums, cut them in half, remove the pit, and chop them into bite-sized pieces. Chop the cucumber, jalapeños, and finely dice the red onion.
  2. In a large mixing bowl, toss together the chopped plums, cucumber, jalapeños, red onion, lime juice, cilantro (or parsley), and salt. Be gentle to maintain the integrity of the plum pieces.
  3. Before serving, taste your salsa and add more lime juice or salt if needed.
  4. Cover the bowl and refrigerate for at least an hour before serving to allow the flavors to meld.
  5. Once ready, give your salsa a good stir and serve it chilled alongside grilled meats or tortilla chips.

Notes

For any leftovers, store them in an airtight container in the fridge. Best enjoyed within 2-3 days due to the natural degradation of the fresh ingredients. You can also prepare this salsa a day in advance!
