- Start by washing all your produce thoroughly. For the plums, cut them in half, remove the pit, and chop them into bite-sized pieces. Chop the cucumber, jalapeños, and finely dice the red onion.
- In a large mixing bowl, toss together the chopped plums, cucumber, jalapeños, red onion, lime juice, cilantro (or parsley), and salt. Be gentle to maintain the integrity of the plum pieces.
- Before serving, taste your salsa and add more lime juice or salt if needed.
- Cover the bowl and refrigerate for at least an hour before serving to allow the flavors to meld.
- Once ready, give your salsa a good stir and serve it chilled alongside grilled meats or tortilla chips.
Notes
For any leftovers, store them in an airtight container in the fridge. Best enjoyed within 2-3 days due to the natural degradation of the fresh ingredients. You can also prepare this salsa a day in advance!
