Ingredients
  

For the Cooking Liquid
  • 1/2 cup chicken broth (homemade or low-sodium for best flavor)
  • 1/4 cup soy sauce (use low-sodium for a healthier option)
  • 1/4 cup balsamic vinegar (adds a tangy sweetness)
  • 3 tbsp honey (or maple syrup for a different twist)
  • 4 tsp minced garlic (equivalent to 4 large cloves)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3 tsp kosher salt (adjust based on taste)
  • 1 tsp ground black pepper
For the Pork
  • 4 lb pork loin (cut in half as needed to fit in slow cooker)
  • 2 tbsp avocado oil (for high heat cooking)
  • 2 tbsp butter (for richness, use unsalted)
  • 1 large onion, sliced (yellow or sweet onion adds richness)

Method
 

Preparation
  1. In a medium bowl, whisk together the chicken broth, soy sauce, balsamic vinegar, honey, minced garlic, garlic powder, onion powder, kosher salt, and black pepper. Set aside.
  2. Pat the pork loin dry with paper towels and season generously with salt and pepper on all sides.
  3. Heat 2 tbsp of avocado oil in a large skillet over medium-high heat. Once hot, add the pork. Sear for 2-3 minutes on each side until golden brown.
Cooking
  1. Slice the onion and place it at the bottom of the slow cooker.
  2. Add the seared pork loin on top of the onions.
  3. Pour your delicious sauce over the pork, ensuring it coats everything evenly.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the pork is fork-tender.

Notes

For added depth, toss in fresh herbs like thyme or rosemary before cooking. Avoid lifting the lid during cooking!
