Preparation
- In a medium bowl, whisk together the chicken broth, soy sauce, balsamic vinegar, honey, minced garlic, garlic powder, onion powder, kosher salt, and black pepper. Set aside.
- Pat the pork loin dry with paper towels and season generously with salt and pepper on all sides.
- Heat 2 tbsp of avocado oil in a large skillet over medium-high heat. Once hot, add the pork. Sear for 2-3 minutes on each side until golden brown.
Cooking
- Slice the onion and place it at the bottom of the slow cooker.
- Add the seared pork loin on top of the onions.
- Pour your delicious sauce over the pork, ensuring it coats everything evenly.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the pork is fork-tender.
Notes
For added depth, toss in fresh herbs like thyme or rosemary before cooking. Avoid lifting the lid during cooking!
