  • 2 cups cooked cauliflower (mashed and well-drained)
  • 1/2 cup onion (diced)
  • 1 cup mushrooms (diced; preferably cremini)
  • 2 large eggs (lightly beaten)
  • 1 tbsp fresh parsley (chopped or dried)
  • 2 tbsp Worcestershire sauce (low-sodium recommended)
  • 1 tsp dried basil
  • 1/2 tsp salt (to taste)
  • 1/2 tsp pepper (freshly ground)
  • 1.5 lbs lean ground turkey (highest quality recommended)
  • 1/4 cup ketchup (organic preferred)
  • 1/4 cup mustard (yellow for zing)
  • 2 tbsp brown sugar (for glaze)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Lightly coat a 9-inch loaf pan with cooking spray or line it with parchment paper.
  3. In a small bowl, whisk together the ketchup, mustard, and brown sugar for the glaze.
  4. In a large mixing bowl, combine the cooked cauliflower, diced onion, mushrooms, beaten eggs, parsley, Worcestershire sauce, dried basil, salt, pepper, and ground turkey. Mix until well combined but do not overmix.
  5. Spread the meat mixture evenly in the prepared loaf pan.
Baking
  1. Bake in the center of the oven for 45 minutes.
  2. Carefully remove from the oven, drain any liquid, and coat the top of the loaf with the glaze.
  3. Return to the oven and bake for an additional 15 minutes or until the internal temperature reaches 160°F.
  4. Allow the meatloaf to rest for about 10 minutes before slicing.
  5. Serve warm.

Notes

Ensure cauliflower is well-drained to avoid a watery loaf. Experiment with spices for added flavor.
