  • 1 tsp Garlic powder Adds a savory aroma.
  • 2 tbsp White vinegar Cuts through richness.
  • 1/2 cup Pineapple juice Balances with sweetness and acidity.
  • to taste Salt and pepper Season generously.
For the Assembly
  • 4 pieces Flour tortillas Warm them for pliability.
  • 1 cup Diced pineapple For added sweetness.
  • 1 cup Shredded cheese (Oaxaca or Monterey Jack) Freshly shredded for better meltability.
  • 1/2 cup Chopped onion For garnish.
  • 1/4 cup Chopped cilantro For garnish.
  • 2 pieces Lime wedges For serving.

Method
 

Preparation
  1. In a large bowl, combine pork chunks, ancho chili powder, cumin, garlic powder, vinegar, pineapple juice, salt, and pepper. Mix well and marinate for at least 1 hour, ideally overnight for richer flavor.
Cooking
  1. Heat a heavy-bottomed skillet over medium heat and sear the marinated pork until browned, about 10-15 minutes, allowing the spices to caramelize.
  2. Lightly warm the flour tortillas in a separate skillet until they become pliable.
  3. On each tortilla, add a generous portion of al pastor, diced pineapple, and shredded cheese, ensuring even distribution for melting.
  4. Fold each tortilla and return to the skillet, cooking until the cheese melts and the edges are golden and crispy, about 2-3 minutes per side.
Serving
  1. Plate the Gringas and garnish with onions, cilantro, and a squeeze of lime.

Notes
