Preparation
- In a large Dutch oven, heat the olive oil over medium-high heat. Swirl until shimmering but not smoking.
- Add the finely-chopped onion, sliced celery, and diced carrot along with 1 tsp of salt. Stir occasionally for about 10 minutes, until the vegetables become soft and translucent.
- Add the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken or vegetable broth, stirring well to combine all the flavors.
Cooking
- Sprinkle in the red pepper flakes, dried parsley, diced zucchini, and the remaining 1 tsp of kosher salt.
- Stir in the orzo, cover the pot, and bring to a vigorous boil. Reduce the heat to a simmer and cook uncovered for about 10 minutes, or until the orzo is cooked al dente.
- Stir in the unsalted butter and 3 cups of baby spinach leaves. Cook for one additional minute until the spinach is just wilted.

Store in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Perfect for meal prep.
