Ingredients

  • 4 cups diced watermelon
  • 1 cup sliced strawberries
  • 1 cup raspberries
  • 1 cup pitted cherries, halved
Zesty Dressing
  • Juice of 2 limes
  • 1/4 cup fresh mint leaves, chopped
  • 1 tablespoon honey (optional) You can omit for a vegan option.

Method
 

Preparation
  1. In a large bowl, gently mix the diced watermelon, sliced strawberries, raspberries, and halved cherries. Ensure each fruit piece is evenly distributed.
Dressing
  1. In a small bowl, whisk together the juice of 2 limes, chopped mint, and honey (if using) until well combined and smooth.
Combine Salad
  1. Pour the lime-mint dressing over the fruit salad. Gently toss to coat each piece with the dressing.
Chill and Serve
  1. Allow the salad to sit in the fridge for at least 30 minutes before serving to enhance the flavors. Serve chilled.

Notes

For an inviting presentation, serve the salad in hollowed-out watermelon halves. Pair it with sparkling water or a light white wine like Sauvignon Blanc. If you have leftovers, store them in an airtight container in the fridge and avoid reheating.
